Eggplant Risotto

I haven't put on any pictures for a while. I recently like to cook risotto for my supper. Risotto is an Italian name, but I believe this word is popular in U.S.
I got nice fresh eggplant from Farmer's market last Sunday. Tonight, I cooked eggplant risotto with tomato sauce.
Ingredients: Rice for risotto, diced onion, shitake mushroom, eggplant, Japanese ginger, white wine and water. Cooking time was 20 minutes. It is very easy to cook.

YUM! I was telling Satoko about the oishii soup you prepared for our breakfast. Please tell me again the name of the plant you put into the soup. Arigatou!
