Japanese style Eggplant soupI found "Myouga" that is Japanese ginger from farmer's market. Myouga has nice aroma itself. You may use it Japanese thin white noodle called Soumen. It gives nice additional taste. I love to use Myouga for clear soup like this picture.
Ingredients: Eggplant, Onion, Myouga(Japanese ginger), Egg, Soy Source, Salt, Japanese soup stock.

I was the lucky one who got to sample Yoko's myouga soup. It was healthy and so tasty. What a good way to begin the day!
